Whiting with Warm pesto salad
Ingredients (Serves 2)
4 whiting fish fillets (~75g each), or any white fish fillets of your choosing
2 tbs corn flour
1 tsp lemon pepper seasoning
2 tbs extra virgin olive oil, for frying
Lemon wedges, to serve
Warm Pesto Salad
200g green beans, trimmed and steamed
150g cherry tomatoes, halved
100g kalamata olives, halved
½ small red onion, finely diced
1 tbs pesto (see recipe here)
Method:
Mix flour and lemon pepper seasoning together in a bowl, coat each fish fillet in flour mix and shake off excess.
Heat olive oil in a large frying pan over medium heat. Cook fish, skin side down for ~2 minutes or until the skin is crisp. Flip fish and cook other side for 1 minute, or until fish is just cooked through.
For the Warm Pesto Salad - heat the pesto in a small saucepan over medium heat. Add the onion, steamed green beans, tomatoes and olives and stir until combined. Cook until heated through.
Divide salad among plates and top with fish. Serve with lemon wedges and a drizzle of olive oil (optional).
