Beef & Noodle Stir-fry
Ingredients (Serves 4-6)
500g lean beef, thinly sliced
⅓ cup sweet sherry
2 tbs soy sauce
2 tbs sweet chilli sauce
1 tsp sesame oil
1 tbs brown sugar
1 brown onion, thinly sliced
2 cloves garlic, crushed
4 cups mixed vegetables, chopped (e.g. mushrooms, carrot, cabbage, bok choy, snow peas, broccoli)
2 tbs extra virgin olive oil
200g packet rice noodles
Crushed nuts and chilli flakes to serve, optional
Method:
Combine sherry, soy sauce, sweet chilli sauce, sesame oil and brown sugar together in a small bowl or cup to make marinade.
Stir half the marinate through the sliced beef, and refrigerate for 20 mins, or whilst you prep the veggies.
Heat half the olive oil in a wok over high heat, and stir fry the beef in batches for 2 minutes or until browned. Remove from wok and set aside.
Heat remaining olive oil in wok, stir fry onion and garlic for 3 minutes or until onion is soft, then add remaining vegetables and stir fry until tender.
Whilst vegetables are cooking, cook rice noodles as per packet instructions.
Add beef (and any juices) back to wok with remaining marinade and cooked noodles and stir fry until hot.
Garnish with crushed nuts and chilli flakes if desired.
