Cranberry & Coconut Toasted Muesli
Ingredients
2 cups rolled oats
1 tbs chia seeds
2 tbs linseeds
2 tbs hemp seeds
½ cup pumpkin seeds
½ cup walnuts, roughly chopped
½ cup dried cranberries
1 cup bran
½ cup shredded coconut
2 tbs extra virgin olive oil
2 tbs honey
Method:
Preheat oven to 180°C
Mix rolled oats, chia seeds, linseeds, hemp seeds, pumpkin seeds, walnuts, and shredded coconut in a large bowl.
Add extra virgin olive oil and honey, and mix to combine.
Place onto oven tray and bake for 10-12 minutes or until starting to brown and slightly crisp.
Once cool, mix through bran and dried cranberries.
Store in large jar or air-tight container.
Serve with yoghurt and your favourite berries. Enjoy!
