Cranberry & Coconut Toasted Muesli


Ingredients

  • 2 cups rolled oats

  • 1 tbs chia seeds

  • 2 tbs linseeds

  • 2 tbs hemp seeds

  • ½ cup pumpkin seeds

  • ½ cup walnuts, roughly chopped

  • ½ cup dried cranberries

  • 1 cup bran

  • ½ cup shredded coconut

  • 2 tbs extra virgin olive oil

  • 2 tbs honey


Method:

  1. Preheat oven to 180°C

  2. Mix rolled oats, chia seeds, linseeds, hemp seeds, pumpkin seeds, walnuts, and shredded coconut in a large bowl.

  3. Add extra virgin olive oil and honey, and mix to combine.

  4. Place onto oven tray and bake for 10-12 minutes or until starting to brown and slightly crisp.

  5. Once cool, mix through bran and dried cranberries.

  6. Store in large jar or air-tight container.

  7. Serve with yoghurt and your favourite berries. Enjoy!
