Overnight Oats with Chia, Apple and Raspberry


Ingredients (serves 1)

  • ½ cup rolled oats

  • 1 tbs chia seeds

  • ½ cup of your preferred milk (if using Almond, Rice, Oat or Coconut milk, considering boosting the protein content with protein powder)

  • ½ apple, grated

  • ¼ cup fresh or frozen raspberries (+ extra to serve)

  • 1 tbs Greek yoghurt, to serve (optional)

  • ½ tbs flaked almonds, to serve (optional)


Method:

  1. Place oats, chia seeds and your preferred milk in a jar, stir to combine.

  2. Gently fold in grated apple and raspberries.

  3. Put the lid on and leave the jar in the fridge to soak overnight.

  4. In the morning, serve oats directly from the jar, or transfer into a bowl and top with Greek yoghurt, extra berries and flaked almonds.

* This can also be served warm. If this is your preference, transfer oats to a bowl and heat in the microwave for 30 - 45 seconds before adding the Greek yoghurt, extra berries and flaked almonds.
